Sodium lactate is the sodium salt of lactic acid. It is produced by neutralizing lactic acid, which is produced by the fermentation of sugar. Sodium lactate is a liquid product.

It is a approved food additive under the E number E325. It is used as a widely compatible preservative, acidity regulator, and bulking agent.
