Trisodium Citrate

Trisodium citrate is one of the three main sodium salts of citric acid. It is mildly basic and has a slight tart flavor.

It is classified under the food additive E number E331.

Trisodium citrate is widely used in the beverage industry as a flavoring agent, its tartness being the main taste provided. It can also be used in a variety of other applications such as ice creams and yogurts, cheeses, jams, wine, and sweets.
