Caramelized Sugar

Caramelization is the process where sugar is heated slowing resulting in a browning and a sweet nutty flavor. As the process occurs, volatile chemicals such as diacetyl are released, producing the characteristic caramel flavor.

Caramelized sugar is used mainly to produce sweets and desserts. Applications range from caramel sauce, to classical caramel candies,  to caramelization of fruits and vegetables.
